Protein Peanut Butter Cookies

Ingredients

For about 10 cookies :

  • 250 g of protein peanut butter
  • 150 g of coconut sugar
  • 50 g of rice flour
  • 20 g of cornstarch
  • 1/2 tablespoon of baking powder
  • 2 to 3 tablespoons of plant-based milk to adjust consistency


Recipe

  1. Mix the dry ingredients: rice flour, cornstarch, and baking powder.
  2. Add the peanut butter and sugar. Mix until you obtain a thick dough.
  3. Add the plant-based milk gradually until you achieve a smooth but non-sticky texture.
  4. Form balls and place them on a baking sheet lined with parchment paper. Slightly flatten them to give them a cookie shape.
  5. Bake in the oven at 175°C (350°F) for 12 to 14 minutes, until the edges are lightly golden.
  6. Enjoy!
