These Raffaello-style energy balls are everything: coconutty, creamy, and with a little almond surprise in the middle!
Made with simple ingredients like oats, almond butter, agave syrup, and a scoop of Pulse protein powder, they’re a healthier twist on a holiday classic.
Recipe
Ingredients:
- 30 g Pulse protein powder vanilla
- 100 g oats (mixed)
- 100 g shredded coconut
- 10 cl plant-based milk (recommanded: vanilla soy milk or coconut)
- 50 g agave syrup
- 50 g white almond butter
Instructions:
- Prepare the base: in a mixing bowl, combine the protein powder, oats, and the shredded coconut.
- Mix wet ingredients: in a separate bowl, mix the milk, agave syrup, and white almond butter until smooth and creamy.
- Combine ingredients: gradually pour the wet mixture into the dry ingredients while stirring. Mix until a firm, sticky dough forms. Adjust consistency if needed by adding a splash of milk or a pinch of oats.
- Shape the balls: scoop a tablespoon of the dough and roll it into a ball using your hands. Repeat until all the dough is used.
- Cover with coconut: roll each ball in the reserved shredded coconut to coat the surface.
- Set and serve: place the balls on a plate or tray and refrigerate for at least 1 hour to firm up. Store in an airtight container in the fridge for up to one week.
