
Peanut butter protein tofu bowl
Ingredients
For one person
- 150g firm tofu, cut into cubes
- 1 tablespoon of Pulse peanut butter
- 1 tablespoon of tamari sauce
- 1 tablespoon lime juice
- 3 to 4 tablespoons of water
- 1/2 teaspoon grated ginger
- 1 bowl of cooked quinoa
- Vegetables of your choice: carrots, zucchini, peppers...
- A few coriander leaves (for garnish)
Recipe
- Mix together peanut butter, soy sauce, lime juice, water, and ginger to form a smooth sauce.
- Fry the tofu cubes in a hot pan with a little oil, then add the sauce. Mix well to coat the tofu.
- Serve the tofu over a bowl of quinoa with the vegetables, and sprinkle with turmeric and coriander.
