Healthy Vegan Twix
Ingredients (for about 8 bars):
Biscuit base:
- 100 g oat flour (or blended oat flakes)
- 30 g Pulse almond or peanut butter
- 30 g maple syrup or agave
- 1 tablespoon coconut oil (solid)
- 1 pinch of salt
Caramel:
- 150 g Medjool dates (or 120 g if very soft)
- 3 tablespoons of vegetable milk (almond, oat or coconut)
- 1 teaspoon vanilla extract
- 1 pinch of salt
Chocolate coating:
- 150 g of vegan dark chocolate (70% for an intense touch)
- 1 tablespoon coconut oil
Preparation :
Biscuit base:
- Preheat the oven to 180°C (gas mark 6).
- Mix the oat flour, almond butter, maple syrup, coconut oil and salt in a bowl. Mix until smooth.
- Spread the dough in a rectangular mold lined with baking paper, to a thickness of about 1 cm.
- Bake for 10 minutes or until lightly browned. Let cool completely.
Caramel:
- Blend the dates, plant-based milk, vanilla, and salt in a blender or food processor until creamy and thick. If necessary, add an extra tablespoon of milk to help the mixture along.
- Spread the caramel evenly over the cooled biscuit base. Place in the freezer for 20 minutes to firm up.
Chocolate coating:
- Melt the dark chocolate with the coconut oil in a bain-marie or in the microwave.
- Remove the mixture from the freezer and cut it into Twix-sized bars.
- Dip each bar into the melted chocolate using a fork, making sure they are well coated. Let the excess drip off before placing the bars on a sheet of baking paper.
Place the bars in the refrigerator for 15 minutes to harden the chocolate.
